Carrots aren’t just for bunnies! They are nutrient packed, full of potassium and folate for a healthy heart, fiber for healthy digestion and beta-carotene for healthy cells. And one medium carrot only has 25 calories!
Here are three easy ways to include them on your Easter table:
1. Looking for quick and easy?
Then try Grimmway Farms Simply Delicious Carrot Creations. Already preseasoned in honey, brown sugar and cinnamon or garlic and savory herb, they are simply delicious and easy to cook. My favorite way to prepare them is just lay them on a sheet pan sprayed with non-stick cooking spray and roast at 350 degrees for 30 minutes. They can also be microwaved for an even quicker addition to Easter.

Easy Easter Breakfast Casserole
Adapted from Unilever Kitchens.
¼ cup Country Crock Spread (trans-fat free, no hydrogenated oils)
3 cups cut-up vegetables (peppers, onions, shredded carrots, broccoli florets)
8 large eggs
2 cups fat-free milk
2 cups shredded, reduced-fat cheddar cheese, divided
2 cups frozen hash brown potatoes, thawed in refrigerator
1 cup diced ham
Preheat oven to 350 degrees. Spray 9×13-inch dish or two 9-inch pie plates with non-stick cooking spray.
Melt Country Crock Spread in 12-inch non-stick skillet over medium heat, add vegetables and stir occasionally until tender, about 8 minutes.
Whisk eggs with milk in large bowl. Stir in 1-1/2 cups cheese, cooked vegetables, potatoes and ham. Pour into prepared baking dish(es).
Cover with aluminum foil and bake 40 minutes. Uncover and sprinkle with remaining cheese and bake another 20-30 minutes or until eggs are thoroughly cooked.
3. Looking for cute and sweet?
Try carrot patch place cards. Just take NEW (no munching on dirt here!) terra cotta mini-pots and place a Dixie cup inside. Fill it with hummus. Then just take a few baby carrots, poke a hole in the top with a toothpick and place a sprig of parsley inside. Just write the names of your guests on each pot (do this before you fill it). Perfect for the Easter table!
