Peach Raspberry Nachos {Recipe ReDux}

Raw food. It’s a trend I hear about working in the grocery store as a supermarket dietitian. Not that I would recommend a completely raw food diet, but there are certain foods you can consume in the raw form that taste so good. Especially fall fruits.

This month’s Recipe ReDux blog link up theme was raw food. Specifically in the dessert arena.

When I think of desserts, I tend to think of baked. But then I thought of a simple recipe I used for a kids cooking class that was a hit, but this time I put a fall twist on it.
And after picking fresh raspberries at the pumpkin patch today, it was the perfect treat.

Peach Raspberry Nachos

Ingredients:
20 cinnamon sugar pita chips
1 cup passion fruit Greek yogurt
1 fresh peach, pitted, diced
1/2 cup fresh raspberries

1. On four separate plates, arrange equal amounts of cinnamon sugar pita chips.
2. Lightly dollop 1/4 cup yogurt over the top of each plate of pita chips.
3. Evenly sprinkle peaches and raspberries over the top of each nacho arrangement.
